This project involved high hygiene spaces for the production, plating and packing of meals, staging cooler, cooler dock, and washroom (trays, carts, etc.).  Space temperatures range from Kitchen ambient, to 38F in production/packing and -10F for storage of incoming food supporting their process.  The design included systems for post-production wash-down/sanitization and drying system; and addressed relative pressurization from high hygiene areas to lesser areas.

Mechanical systems were designed to support the food production spaces, including pressurization systems from high care and low care spaces to support food production and plating. Heating and cooling systems were designed to support the food production equipment including air compressors, pumps, domestic water systems and the main electrical distribution system. Exposed mechanical systems in the production spaces utilized stainless steel construction to allow for proper sanitation processes.

Electrical distribution was designed to support large mechanical equipment as well as food processing and production equipment installed in the finished space. Electrical systems were designed to be wash-down rated in production spaces. This included the use of NSF rated gasketed LED lighting fixtures, in-use weatherproof electrical devices, and NEMA 4X rated boxes. Custom lighting design for production spaces to allow light fixtures to be serviced from above, which will reduce production down-time. Stainless steel conduit installed exposed throughout production spaces with custom standoffs to allow for proper sanitation behind the conduit. The freezer design included an in-floor heat trace system to prevent frost heaving.
